Preparation:
First tenderize the pork steaks with a meat mallet, to grant them an even surface, so they can cook evenly.
To prepare the Marinade, season the tenderized pork steaks with salt, pepper, sliced garlic, bay leaves, and Portuguese beer or any pale lager.
Cover this marinade and refrigerate for at least 1 hour, or overnight for best flavour.
Heat a skillet or griddle over medium-high heat. Add in the olive oil, the butter, and the white wine. Let it simmer for 5 minutes.
Remove the steaks from the marinade and add the marinade to the skillet. Again, let it simmer for 2 minutes.
Add the pork steaks and let it simmer for 20 to 30 minutes in medium-low heat.
To assemble the Bifana just split the buns and briefly heat them on a toaster on the griddle or in the oven, for 1 to 2 minutes.
Place the Bifana in the buns, dipping each side of the bun on the pan juices or spooning a bit of the pan juices over each one.
Additionally, you can add mustard, hot sauce, and sliced pickles if desired. These are optional toppings that add extra flavour to the Bifana.
